"Now we're ready to cut our sheets into squares to fit into our muffin pan. There's not really a science to this, it depends on the size of your muffin pan as to how big or small you want to cut the squares, rectangles, elephants, whatever shape you want to use. Just judging based on that, I'm going to cut four across this way and three that way. If you're concerned about the size at all, they will kind of fold up and overlap a little. You have a little leeway. You don't have to have an exact measurement or size. That beep means that my oven is done pre-heating. Perfect timing! I did pre-heat the oven to 365, so it is ready for me when I get there. Cut across. Let's do three across. It's really thin, so you don't have to press so hard and you don't want to ruin your counter tops; very carefully. We'll just place all these into the muffin tin. We're going to start this on the corner. Handle it very, very delicately and tenderly. We're just going to place it down, right into the muffin tin. See how it kind of bunches up at the edges. There we go. So, you see it still covers quite a bit of the muffin pan and the little hole in there because it kind of overlaps itself. So you have a little leeway with that. Let's get this next one. I could've cut them a little larger if I wanted more of the pastry to come up on the sides, it's really up to you. That part is to your creative freedom. How large do you like your tartlet? We're just going to finish putting these in all the little holes in the muffin pan, we're going to stick it in the oven. This really only takes a few minutes to bake. Keep an eye on it. Generally, eight minutes, it might be seven, it might be nine. Keep your eye on it. When you see it turn golden brown, especially the edges that are kind of peeking up, those will be the first to turn golden brown. When you see it turn a nice pretty golden brown color, take them on out. You don't want to burn them. Just be careful. Keep your eye on it, probably about eight minutes."
