" Helen McMahon, here for Expert Village. The next ingredient we are going to add to our cookie dough is vanilla and I use the pure Vanilla; this is PureVanilla Extract. It gives a much better flavor even though it is a lot more expensive than the artificial flavor. You could also use vanilla beans but they are even sometimes a little more difficult to get to. So I am going to add 2 teaspoons and before I do that, I am going to turn off the machine simply to ensure that I don’t loose any of this vanilla as I am pouring it in. Sometimes the beaters have a tendency to whirl around when the vanilla is going in and kind of splatter some of it. You want to make sure you get all of that into the dough and not having any of it jumping up out of the machine where it won’t be used. I find that it is best to add these things before adding the flour. Again, I am going to emphasize we should scrape down the sides of the bowl and the edges and let that roll away. You can see that it is a nice creamy consistency now. "
