"Hey guys! My name is J and I am speaking here on behalf of Expert Village and we are going to move on to our candy apple recipe. In this clip, I am going to show you how to add the syrup to the pot and what we are going to do is grab this nice big cup of water and add all that straight to that nice hot pot. That has come into a boil as you can tell. Now all this mixture is going to called crystallization. It is going to become hard. What you want to do is stick your thermometer inside your pot and you want to let this sit in there and make sure this gets up to 300 degrees. Basically guys when this gets to 300 degrees, you are going to want to take the pot off the heat and what I am going to do is sit inside the sink with a little bit of warm water in the sink. And basically watch the temperature. It is very important that that temperature reaches around 300 degrees and if you don't do that, you are not going to get yourself consistent candy apple. You are not going to get the right texture and you are not going to get the right formation of the syrup. Basically just let this syrup go guys. It is going to boil and boil and if you see crystallization on the side of your pot, you can get a wet red and wipe it down that way you don't have all the hard crystallization on the side of your pot. You want to keep the heat at very very high heat. You want to leave that until it reaches a high temperature. If you want to get it to be even higher, you've got to make it higher and put in on completely high, then do that. It's up to you to make these decisions. But I guarantee you that you want this to stay hot and just let it sit there until it gets to 300 degrees. Once it gets to 300 degrees, we are going to add the red food coloring and we will basically almost be done with this syrup. That is it for adding the syrup to the pot.
