"Hi. My name is Kip and I am here on behalf of Expert Village. Today we're making New York style cheese cake. In this clip we're going to take and mix the filling ingredients and add one egg at a time. Its very important, add one egg at a time and there's four eggs. Now when it comes to mixing the filling for your New York style cheesecake, you can use a whisk by hand. It'd be harder but you can do that or a hand mixer. We're going to use the Kitchen Aid that I have and the whisk attachment to mix the filling. At this point, we're going to beat this until its smooth and add our eggs last and one at a time. You beat this until smooth. Once the flour has been caught up by the liquids and the moist cheese and so forth, you can speed it up. Initially you don't want to go too fast 'cause it'll blow flour out the top of your bowl. Once smooth you can begin to add the egg. We don't want to add all the egg at one time. We should add about a fourth each time. And then mix that in. Add another one. Egg number three. And then add the last egg. Once you've mixed it for a while it?s a good idea just to take a spatula and go around the edges and bring some material back down into your mix because with this particular attachment, especially, I notice that cream cheese doesn't get pulled forward like a dough when you're using a dough hook. As the dough in the flour becomes more dough like, it actually picks it up from the sides. With the cream cheese especially I notice that that has a tendency not to want to work that way. So just go ahead, pull your material down and mix it in. And that looks about right."
