"Hi my name is Kip and I'm here on behalf of Expert Village today we are going to make a New York style cheesecake. We have just finished mixing the dry ingredients and blending those in with our hands the butter the sugar and the 2 types of flour and now it is time add our egg and cut the dough in. So lets do that now. The first thing we are going to want to do is take our egg and crack it into a small boil and just beat it well. Make sure it is all mixed together quiet nicely. Then we are going to go ahead and mix this together using what I call a pastry knife it is actually these wires I got 2 of these one of them is flat and it is sharpen. They both have accomplish the same thing. This is a tool that you would need to get so go down to your local supplier of baking products and get one of these it would make your pie crust and biscuits and these things much better. With a cutting motion cut in the egg and this would help any further mix the butter with the egg and the flour and the sugar. Use a cutting motion once you have mixed this quiet well it would start to look like other pie crust that you may have been use to making with shorten or Crisco of some sort it would feel different. It is a little bit more moist or oily feeling even though we don't have any oil in it a heavier feeling in it anyways. But it would still look a bit the same although the egg gives it a little bit more yellowy sort of color. Now what you are going to want to do is gather this into a dough ball and a lot of times and this looks like it would be one of the case as well cause big and small and never consistent so a lot of times you have to add a teaspoon or so of iced or chilled water to get the dough to come together. "
