"Okay, while our cheesecake is baking to perfection in the oven, we're gonna start on our kiwi topping. Now, again, I just want to tell you something, I love kiwi but you can pick whatever your favorite fruit is. I just really love kiwi. And I purposely picked some I felt were just a little under ripe so that they would be just a little bit more tart. Cause I thought that combination, that tart kiwi with the cheesecake which would be just splendid. So I have several kiwi here that are small and fortunately to cut them up, they're kind of on the ends. So I have several. I'm not sure how many I'll use, maybe all of them. Depends on how much I want on the cheesecake. Now, I'm gonna show you how to cut these. First you cut the ends off. There we go, just get that little tip off. Oops the sticker. That would help to take that off. So you want the edges off. So from there you're gonna go down the sides. You're gonna have to curve it too, just follow it as closely as you can, see that? Like a strip down the side of the kiwi. The faster you go, the more kiwi you're gonna shave off, so you kind of want to take your time. Save as much kiwi as you can to put into our fruit topping. I don't want it all to end up on the peel, the skin. So you just go down the edge of the kiwi like so. Then we'll go around the bottom and get those last little pieces, see? Last couple of pieces down here. I'll go backwards, finish going around. I'll go down to get those last couple pieces on the other side to take care of those. This is how you can make the most of your kiwi. When I eat one at home, I just cut it in half and spoon it out with a spoon. My roommate actually told me that. Save a lot of time, but in this case, we're actually wanting to cut it up, kind of keep little pieces to put into our mixture. So I'm gonna keep at this and ones that I have all peeled, I'll cut it up and I'll show you what our little pieces of kiwi look like."
