Mixing Ingredients Together to Make Cheesecake Filling

"Okay we have our cream cheese and sugar mixture in there and we have my sour cream not cooperating. I have a little eight ounce container of sour cream which is perfect. I need a cup which eight ounces is a cup. So we're gonna add this to it, as soon as I can get the foil off my sour cream to cooperate. We'll add that into there. We really cook here! Okay, I'm gonna just turn this on low, get it going. Oops, a little messy. Add this in. And it's mixing. We got a little on side of the mixer. That's alright. Scrape down this. Be sure you get everything in there. There we go. You're gonna get a little dirty. That's okay. It's good food. Who wouldn't want to get dirty with that? Be sure that everything's out. And it's really important that you do this, that you're adding all the ingredients gradually and slowly. It's all, and baking is all about how all things combine. How they react to each other. So the order and speed at which you add everything really does make a difference. So, that looks yummy. And, next I'm gonna add the eggs. Before I add the eggs, though, I'm gonna stop this and I'm gonna just get the sour cream off the side of the bowl. I'm gonna make sure I get every little bit in there. And I'm getting messy as we do it. That's okay, I'm gonna cheat. It's good already. Alright, it's back in there. Let's get this mixed just a little bit more and then we'll add our eggs."
