"Hi, I'm Jennifer Cail and on behalf of Expert Village I'm going to show you how to make this rich espresso fudge. Our next step is going to be dissolving the espresso powder in water. You are going to use half a cup of water and you are going to pour it into your sauce pan that you are going to use to heat up your sugar mixture. And then we are going to add two tablespoons off espresso powder. Now espresso powder can be very difficult to find. So it is entirely possible that you will not be able to find it at your local store. If that happens then instead of using the espresso powder you can also use regular espresso grids. You just want to get them as finely ground as possible. So if you are grinding your own espresso beans you want to have it on the finest setting. This can only be achieved with a burr grinder instead of the less expensive grinders where you are just kind of making it grind until it gets to the texture that it needs to be. If you use a burr grinder you can set it on the finest grind setting and make your own espresso powder and then you are just going to mix it in with the water. Because it is not going to dissolve it is going to have a slightly different texture, but the flavor is going to be the same as if you use the instant espresso powder. So you can see in the pot where mine is not dissolved but you got a nice dark color to the water. You might want to let it set for a few minutes so that some of the flavors extracted from the espresso grounds. But regardless of whether you are using the espresso powder or the grounds we are about ready to go to our next step. "
