now we're back to check on the creme brulee and here we can see it kind of bubbling up just a little bit and pretty browned on the top. So it's getting really close to be done and actually we look at the time it's just about done so we can go ahead and take it out and check for the consistency. Now we're going to take out the creme brulee and we're going ahead and set it on the side, okay now that we took out the creme brulee from the oven you can just let it cool just a little bit and the ramicans will still be pretty hot so you might need to use some gloves or you can use a mit. If you have some type of tongs that will work just as well but for this one I've already let it cooled and I can go ahead and lift it onto the rack and now I can show you the consistency as I kind of like tap it just go ahead and tap the ramican at the bottom or in the center. Then you see the creme brulee inside it starts to jiggle in the center and it's about the right consistency.
