"Hi I am Georgette Rampone for Expert Village. We are going to test the doneness of our spice cupcakes. They have raised pretty well but, no not done yet. You want to poke the center of your cupcake with your finger. If it springs back it is done, if it leaves an indentation it means that it is not quite done yet. Eventually what we will do is we will test with a skewer or a chopstick. We are going to be inserting a skewer into the center of the cupcake to see if there is any batter left on the skewer when we pull it out. If there is anything clinging to the skewer it means that they are not quite done. The minute that they are done we want to remove them from the oven so that they do not get overdone. We will wait just a second and see if these are done. Okay they have been in about 30 minutes. They are looking great. Let's try our finger test. Great, springs back nicely. Now I am going to stick a skewer in to make sure that nothing is still raw inside. You can use a wooden chopstick as yet. We have stuff sticking to the skewer so they are not yet done. We are going to bake them for about one more minute. It looks to me as if this oven is heating unevenly. I am having some of the cupcakes on the edges not cooking as quickly as the ones in the center and that will happen with a lot of ovens. It is good to know your oven and how it cooks. If you have an oven that heats unevenly and you know that beforehand, then you can turn your pan in the middle of cooking to prevent one side from cooking more than the other."
