"Hi I am Georgette Rampone with Expert Village. We are making pumpkin spice cupcakes with vanilla bean cream cheese icing. We are going to put everything together now. We have creamed our sugar and our spices and butter together. To that we are going to add two eggs, half cup vegetable oil, just about a quarter teaspoon of vanilla. This just helps bring out the flavor of the spices and our pumpkin. We are going to put one cup, one full cup, plus two tablespoons of pumpkin. We are going to mix this for about thirty seconds. Again we are going to be starting on low speed to make sure that we do not have any things flying out at us and then we will pick up speed. We will stop and scrape the sides of the bowl to make sure that all of the ingredients are incorporated and to that we are going to add some club soda. This is just a third cup of club soda. This just gives a little bit of moistness and the fizz just helps the cupcake to rise, so that is one third cup into the mixture. Mix it again starting at low and then increasing the speed. Now I am going to add my reserved flour mixture. Where is it, oh here it is. I am going to add it all at once. Now once you have added this many dry ingredients it is really important to start it at low speed because things will go flying. We will kind of ease into this building up a little speed at a time. Now we will add more speed. I am going to lower my mixer once to give it a nice stir to make sure that none of my ingredients are sticking to the side and that all of my ingredients are incorporated. We just want to make sure the ingredients are mixed but not overbeaten because when you overbeat something with flour it over activates the gluttons and that is what makes it tough. There we go. I think we have got cupcake batter. This is what it should look like."
