"Hi! On behalf of Expert Village my name is Andrea Spano and I"m going to show you how to make Ganache from my new book "Not Just Desserts." When we were in the restaurant, at night when we wanted to have something special for the patrons and they wanted something very rich in chocolate. I would take brownies, but I would cut them in little small rectangular pieces and very hard from the freezer, but not really frozen but very very firm and cold. We would warm up ganache and we actually had a dessert that was a brownie fondue. We would have the ganache in a warming container on the table and everybody would dip in their brownies that were really really cold, and it was like a great hit. "
