"Hi! On behalf of Expert Village my name is Andrea Spano and I'm going to show you how to make Ganache from my new book "Not Just Desserts." Okay, so now we've already piped our wall of icing around the cake so that when we pour the ganache on top of it it doesn't ooze over and go onto the floor. You're going to have to clean it up. What I always like to do is I start right in the middle. I just pour enough...like maybe that much and I stop. Now, because it's going to spread around, I slowly rotate the cake so the ganache fills in all the crevices and it creates that nice smooth surface on top of the cake. You don't have to level it off. Now, it's a nice easy smooth surface so that you can write anything you want. It could be birthday cake. It could be congratulations. It could be a happy face. "
