Now that our dough is ready I would like to take a moment to discuss the use of a cookie press. There are several different parts to the cookie press that we will be using. This is my favorite type of cookie press; a good metal mechanical one. As I said earlier, this is thirty years old and it still works great. You can use an electric one but it's not going to last quite as long as a good metal one. So first you have the tube. This is what is going to hold the cookie dough. Then you have the mechanical part that pushes the dough through the tube. Now to start you are going to have to pull it all the way back. This is the position that it will be in when you get ready to fill the tube. On the end of the tube you are going to place one of your cookie press dyes. You're just going to put that in the cover and screw it on. You will then take the cookie dough which I will show you momentarily and put into the tube and screw the mechanical press part. Now on this one you have a dial where you can adjust how thick you want your dough to be. This is very important depending on the size of the dye that you are going to use. And then once you are all ready and you have it at the correct position you are just going to press the handle and each press will give you one cookie. Which is why it's great to use a cookie press if you are going to make lots of cookies in a short period of time.
