"Helen McMahon for Expert Village. Our cookie dough is now completely assembled. The nuts and the final ingredient, the chocolate chips, have been added and it's very nicely and uniformly mixed. The next step is to drop by spoonfulls onto the pan. We'll start out with a fairly small bit, about this size. A little more than what would fit on teaspoon. That's a regular table teaspoon, not a standard measuring cup size. Put them about 2 inches apart on the pan. As we indicated before, the recipe says the pan does not need to be greased. Some people do like to grease them or some people have their pans seasoned a little bit from other things that they've baked. This gives it enough space so that as it rises, they won't run into one another. It's kind of a nuisance to try to cut the cookies on the pan before you take them off. You can sort of eyeball it to see if they're pretty much uniform. After the first pan full goes into the oven and comes out, you can gage whether you need to place them closer together to save space or if they're begining to run together, then you want to put fewer in a row so you don't have to worry about having them blend in to one another. "
