"Helen McMahon for Expert Village. The next ingredient we add in our Toll House cookie recipe is vanilla. Vanilla is a wonderful, wonderful ingredient. It imparts a lovely flavor. It comes from the vanilla bean in nature. Very often you will see a huge price difference between imitation vanilla and pure vanilla extract. It's worth the investment to buy the pure vanilla extract. Sometimes you can find it on sale in fairly large containers. Otherwise, it's just an ounce or two. You only need a teaspoon of it in this whole recipe. It's worth the extra money to use the real mccoy. We're adding this and putting it in slowly so it becomes incorporated into our cookie dough. You want to really tap it quite a few times. It's so precious you don't want to waste a drop. Get it all our of there. Because it is just a teaspoon full going into all that batter, you want to be sure to let it mix in very thoroughly. I can't repeat this often enough. You do want to be sure that your scrape the sides of the bowl and the beaters and make sure that your product is nice and uniform. There it goes. Nice lovely clump of this wonderful batter. You can smell the vanilla already. Okay. We'll give it another magic whirl. There it is. "
