" Hi I'm Karen for Expert Village lets take out our work surface a nice clean work surface and we will flour that lightly. Marble is also a good work surface to roll out dough because it is nice and cool and it is important that the dough stays nice and cool. We don't want to overwork the dough at all, we don't want to handle it to much because our hands are warm. The cooler you keep this dough the nice and flakier it would be just gather it up and this is going to make this crust yields a 2 crust pie crust. So we are going to break that into 2 pieces and just form it into to a flat round disk. Notice I'm not kneading it at all I'm leaving it a little bit crumbly and just kind of gathering it together and forming little flat disk. We would wrap that up in plastic wrap and let it rest in the refrigerator while we prepare our apple filling. I will put these in the refrigerator and let them rest while we prepare our apple filling. "
