Now that we let our sweet potatoes cool it's time for us to mash them up. We are just going to slit them open and then get all of the fleshy part. If you can peel the skin away then that is great it makes your job a little bit easier. See this hasn't cooled very much you want to make sure it at least by the time you are adding in your ingredients particularly the eggs that your sweet potato has cooled off. You don't want those eggs cooking, as soon as you put them into the sweet potato mix. Once you got your potatoes in bowl you are just going to start mashing them using a potato masher. You want to get a nice soft consistency cause you want to be able to really mix all of your ingredients in. Even if it's cooled to the touch it's still very hot you can see by the steam rising off of this. So by mashing them you also give it more surface area so it's going to cool a little bit better. You got that first potato in you have the ends of your potato and you want to scoop that in there too, you want to be careful when you're cooking it that if you have a longer thinner sweet potato that the ends don't get over cooked. That can easily happen so you might want to get a nice big fat sweet potatoes cause they are going to cook a little bit more evenly.
