Okay the crust has been in the oven for 10 minutes lets take a look at it and make sure that it is set up nice and hard on the bottom. Okay as you can see it's formed well we patted it down nice and tight, you can feel that it's almost like one now, the lard, the sugar, the cookie it's all incorporated you have your oreo cookie crust. So what we'll do from here first of all I'm going to wipe down the side of the cake to remove any cookie crumbs we'll just do this real quick. Okay now we'll spray the pan again you want to spray heavy make sure it's from the bottom to the very top. When this is cooking cake will actually go above the rim okay so you want to make sure that it's totally sprayed so it doesn't stick so the cake can freeely move up and then once it comes out of the oven it's going to rest and go back down. So you really really want to spray this good so lets spray the pan, couple times around there that looks good. We have that sprayed going to set this to a side and we will get our basic cheesecake batter here.
