Combining Sugar & Butter for a Pound Cake Recipe

"My name is Brandon Sarkis on behalf of Expert Village. Today, I'm going to show you how to make a nice simple pound cake. So our first step is, we're going to get our mixer ready here. And we're going to take our sugar and just dump it all, let me move that out of the way a little bit. Oh well, I'll just take it out. It's easier. Going to take our sugar and just dump it all down in the bottom of our bowl. All of it at once. And next, we're going to add our butter. You can add the butter right in the stick form if you like. You could also cut it up if you want. Cutting it up makes things go a little faster. Whoopsy. I just dropped the butter. Shake it out of its, oops. You don't want the paper in there, because the paper doesn't make for a very good recipe. Or so I'm told. So you get your butter in there. Put the whip attachment back in. And we're going to do what's referred to as creaming the butter. What this does is this uses the granularity of the sugar to actually break down the butter. So we're going to go low here, whoa. So we'll just take a towel and cover our mixer up to get this started, this way we don't sling sugar everywhere. So we'll just turn it on low. You want to give it a second, then you can see how it's working. I think now we're pretty much safe. We can lift the shroud here. You want to let this go for a few minutes until our butter is a nice creamy texture, which you'll see when I come back. So let this go for a couple of minutes, we'll come back and see how it's looking."
