"Hi, my name is Jane Murphy I'm a chef here at Zen Clay Cafe in Morgantown, West Virginia and I'm going to be showing you how to make a heart healthy lentil soup on behalf of Expert Village. As you can see now the vegetables are nice and sauted. So we're going to be adding the lentils to them at this point. When you're adding lentils which is actually a legume not a bean, you want to be careful and look as you put them in to be sure there aren't any small stones or dirt particles. You can do that by laying them out in a plate or if you've done it as long as I have, you just kind of watch as you pour them into the soup. Just like the vegetables I'm going to stir the lentils just very briefly probably no more than a minute to get them a little bit what we call roasted. You want to just be sure that you have at least a little bit of liquid at the bottom and that's really all it takes."
