"Hi, my name is Jane Murphy I'm a chef here at Zen Clay Cafe in Morgantown, West Virginia and I'm going to be showing you how to make a heart healthy lentil soup on behalf of Expert Village. Okay, in order to start our next step which is going to be sauteing our vegetables. To make our recipe heart health we want to change the recipe that usually would use oil to saute without the oil. So one thing that I like to do is take a few dehydrated Shiitake Mushrooms, put them in some hot water to hydrate them. While they're getting soft I'll get a pot which has some water in it and a small amount of salt to make it slightly salty. Once the mushrooms are soft I'll cut them into small pieces, put them into the water and boil it for about 5 minutes. Now I can use the broth without the mushrooms and use that in place of oil in any recipe that requires oil."
