"Hi! I'm Anne Mooney. I am a personal chef and food writer. I write for Simply the Best magazine in Delray Beach, Florida and today I am here on behalf of Expert Village. When my daughter was growing up, I had sometimes a terrible time getting her to eat healthy food with enough protein in it. She's like every other kid wanted starch and sugar so we developed a little item called a monster eye and that is what I am here to show you today. What we did we took a piece of bread, any old bread will do whatever your favorite kind is and a biscuit cutter, cut the hole out like so so you have bread with the hole in it and put a lot of butter, a lot. I am going to use two tablespoons because what you want is for the bread to soak up the butter and get crisp and then you want enough butter in there to fry the egg and what we are going to have what some people call a bird in a nest but we called it a monster eye and it was a big favorite, so here goes. Your cardiologist would not approve but this is for a kid. They are sort of innately healthy. So we are going to get the butter to where the foam is beginning to subside in the skillet. This is about medium heat. It is not real real hot. And we put our bread with the hole in the skillet and then we slide the egg into the hole like so and that monster is going to have an eye in just a few minutes. Now I am putting the top on the lid of the skillet because it makes the egg cook faster and if you are trying to get to school, you have an interest in making that egg fast as possible as you can without scorching it. So it will sit there over medium heat for about probably 60 seconds and then we will flip it but you don't necessarily have to. If you put the lid on the skillet, the steam from the bread and the egg will probably cook the top of the egg. Now I am going to turn it over. Be sure and get your spatula underneath the egg, otherwise you are going to loose it. There we go. Now we will cook the eye of that old monster the rest of the way and then you will be off to school pretty quick. "
