In this segment we are going to talk about your basic Chef's knife and a couple of demonstrations on how to use it here. We are going to cut up a red pepper. First what you want to do is hold the knife with a nice firm grip to the side. You don't want to be chopping down like that. It doesn't do much for your dexterity. You want to hold it very firmly, like so and you want to make a rocking motion when you make a cut. We are going to cut the top off, then we are going to slice that in half. What you can do from here is cut it in half again and very carefully away from you, slide the blade right like that to just rid of that membrane. You can knock the seeds off. Again, we are just going to slide the blade, just like so; cut those in half; we'll clean these. From there you can very carefully cut slices, you can chop and prepare it any way that you like. "
