"Hi, this is Dave for Expert Village. Today we're going to make a California creole type of eggs Benedict. We're going to start off with our home fried potatoes because they're going to take longer than the eggs Benedict and we're going to show you how to peel a potato. I use the old fashion potato peeler or vegetable peeler like what I grew up with there are a lot more fancier gadgets around these days. But I still like to use these and it works just fine as you can see. So you want to go ahead and peel this get a nice big potato so I just like to go one side, all the way to the top. This is a russet these hold up really well in these types of applications unlike a boiling potato. So I'll turn it to the other direction and just go ahead and peel that right off."
