"Hi! I'm Karen for Expert Village. Now I am going to show you how to make a healthy pancake batter. The healthy in this batter is the addition of ground flax seed. Flax seed is an old health food that is recently enjoying new celebrities status. It is high in Omega fatty 3 acids and has many health benefits. You can buy the ground flax seed in any health food store but I prefer to buy the whole seed and grind it myself for extra freshness. To grind your flax seed yourself you will need a coffee grinder like this one. This is ust a regular coffee grinder that you grind up fresh coffee beans with and you just take, this is the flax seed, shiny seed with a hard shell. It is difficult to eat. Your teeth won't break it up. You put 1/4 cup into your coffee grinder and just grind it up until it turns into a fine powder. When you add this to the pancake batter, it has no strong flavor and it makes it look like whole wheat pancakes. Before we start, we want to take out all of our ingredients to make sure we have everything we need. We are going to be using 1 1/2 cups of flour, 3/4 cups of ground flax seed, 1/4 cup of sugar, 4 teaspoons of baking powder, 1/2 teaspoon of salt. We have 3 eggs here. From them, we will be using 1 whole egg and 2 egg whites, 2 tablespoons of oil and 2 cups of milk or soy milk if you wish. "
