"Hi I'm Karen for Expert Village. Today we'll be making homemade pancakes and waffles. We'll be making classic waffles, and belgium waffles. A variety of pancakes and a lovely variety of toppings. Let's get started. Now we're going to make a basic pancake batter. Let's get all our ingredients out before we start to make sure we have everything we need. We're going to be using 2 1/2 cups of flour, 1 1/4 cup of sugar, 4 tsp of baking powder, 1 1/2 tsp of salt, 2 eggs, 2 cups of milk and 2 tbs of oil. Let's start by mixing our wet ingredients. We'll first crack our eggs into a bowl. Make sure you don't get any shells in there. That's 2 eggs. And then I like to beat up those eggs nice and light. Use a circular motion, a quick circular motion. Because you want to incorporate some air into those eggs, it'll help make your pancakes nice and light. Just about a minute or two. Okay. Then we'll add our 2 cups of milk, and our 2 tbs of oil. Measure your oil over the bowl to be sure you don't drip any on the counter. Put that aside. Then mix that up again...a circular motion... incorporate all the wet ingredients. Okay. "
