"Hi, I'm Stephanie Barnett here on behalf of Expert Village. I am going to show you today how to make a fabulous Split Pea Soup. So I have my stock pan on my stove and I've turned it on a medium high temperature, I am now going to add a couple of tablespoons of Olive Oil. You want to swirl it around the pan so that it coats the bottom. You can hear it kind of crackling. You know that pan's hot. You are going to now add the onions. See we've got a nice sizzle on there and you want to stir the onions and coat them with the oil. But once they are coated, shake the pan and the onions will go over the bottom and just let them sit. You need to let them sit so that they can brown. Once they start to brown, then you can stir them some more. It is crucial that in this beginning stage that you let them just brown. So now my onions are starting to caramelize. You can see if they are caramelizing in the pan nicely. At this point, you don't want to stir often so that they do not burn and so that all the edges do get caramelized. Move them around, move them this way, let them sit for a couple of minutes and then stir again. "
