"Hello everyone! My name is Matt Fuller and this Denise Bennett, my partner. We are the proud facilitators of the Light and Love Cafe. We are here on behalf of the Expert Village. I'm going to go ahead and leave this while I do have an onion that I have partially prepared already. Basically what you do if you're not familiar. My best thing is just to cut off the top here and cut off the end. Then I do take a couple of the outer layers of this red onion off and the rest of it is the edible portion. I try not to use this very center core. It just not is appealing to be. It's a personal preference though. Basically what I do is cut this. Whatever your preference is is just fine. Since we're making a fairly small portion, I'm not going to use too much onion because it is a very powerful vegetable. To be honest with you, this is one of my favorite things to do in the preparation of raw food. I just love how this feels. It's just a fun thing for me. Plus, with certain vegetables it is just the fragrance that comes off of these. It just gets your taste buds watering. Your body is getting excited about the food that you're going to eat. It's just the part of it for me. One of it, aside from eating it. It's all part of it."
