"Hello everyone! My name is Matt Fuller and this Denise Bennett, my partner. We are the proud facilitators of the Light and Love Cafe. We are here on behalf of the Expert Village. The next step is to some of these, we're going to go ahead and give a quick rinse under the water just to get any dirt and mud that might be on them. Then we'll come right back and start cutting this up for you. While Denise is rinsing those off, I'm going to start with the coconut. If you're not familiar with the young Thai coconuts, what you want to do is basically cut off this top pyramid portion right here. You do need to have a fairly heavy knife with a fairly big blade. I do try to keep one hand behind my back for safety. What you do is you just try to get about an inch away from that point is what I found works best for me. Yes, this does take practice and I do encourage you to be careful when attempting your first young Thai coconut. There's beautiful coconut water in here. I'm going to go ahead and put the bowl over here and pour this in. As oppose to some people starting with water, vegetable stock, or a chicken stock, this is actually the base of our wonderful raw soup that we're preparing for you today."
