"Hi this is Richard Buccola here in New York City and on behalf of Expert Village today we are going to show you how to make some cream of broccoli soup. Okay so first of all onions sauteeing in the pan you want to get them translucence but there is no better smell. You would wake up the whole house with that. I'm just going to wash off my celery stock right quick give it a good wash, get all the dirt off, give it a good shake, a little paper towel to dry it off right quick. Just a really simple chop. Realize with this dish you are not going to have to go crazy when you are chopping cause we are going to puree everything. So if it is not finely chopped you don't have to worry there is not mistakes here we can make it happen. I just cut the celery stock in half like so. Some time you have a little bit of trouble but no big deal. But cut it in half like this and get both pieces and again watch your fingers you see my knuckles, my fingers go in from the knuckles so when it cuts always pulling back like that and just putting your point on the board and just cut them back. Just chop these up really simple, go straight through and we are going to add this right to our pan with the butter and the onions and we are going to let these open up and all of these flavors would fuse together and would start to make cream of broccoli soup right under your city. Small kitchen, you don't have to be a big chef you can cook like a big chef right here on Expert Village."
