"Hi this is Richard Buccola here in New York City and on behalf of Expert Village today we are going to show you how to make some cream of broccoli soup. But again this is a big onion you don't want to go with a big onion you just want to go with a small to medium one. So this I would save for another soup or something. Really simple we are going to cut the onion straight down. There is a old trick keep your fingers in so your knuckles don't get cut. Just straight down the whole onion and just turn it this way, hold it and just cut. That is you chopped onion. You can even you see these big pieces just pick a point and start chopping your onions so you get a nice fine pieces. When I come back I would show you how to chop up that celery stock and start putting this in to saute in our pot. "
