"Hi this is Richard Buccola here in New York City and on behalf of Expert Village today we are going to show you how to make some cream of broccoli soup. Okay we are back we are going to make some cream of broccoli soup. First of all buying broccoli you are going to need fresh broccoli what you want to do is check the date always make sure that the date is good. Also sometimes you don't ever know they might put a different date on it I don't know I just smell it first. If it does not have the smell really it is good, it looks good in color, it is good in texture, it is not falling apart. A sure fire way of seeing if broccoli is bad it would have like mold is growing on it, you don't want this. You are going to need about 8 cups. How do you tell a cup? Usually broccoli flowerets would be you know this size this is a cup, now here is your cup it is pretty much inside there. It is going to cook down so you need about 8 of these 8 flowerets should be fine. You know here is the smaller one you are going to have to judge it. But realize the it cooks down and it we are going to puree it so don't worry about it if you are over or under a little bit.
