"Hi! This is Richard Buccola here in New York City and today on behalf of Expert Village, I am going to show you how to make Scalloped Potatoes. So I am back and I had one medium onion and I tell you it's about a cup when I see it all chopped up. Just by the eye I can see that is going to be a cup. So I am only going to use half of this onion because you only want a half a cup of chopped onion. You never want your food to have an overwhelming taste of onion or salt or something. You just ruin it. You just want to have a little bit. A little hint of it so to speak. So with that said, I am going to go over to our potatoes now and get our a colander. I always forget the colander and the utensils. Get your colander and put it in your sink. Your potatoes are definitely going to be done now. Turn your flame off, make sure you use your pot mitt or your towel so that you don't burn yourself. Go right into the sink with your potatoes. What you are going to do then is get some cold water from your refrigerator, put it right in this pot, fill up your pot with some cold water and take your potatoes and this will actually stop them from cooking. You don't want them to just sit there and keep cooking. They are also going to turn yellow that way. Put them back in cold water and they'll stop cooking. When I come back, we are going to keep putting this together. Now I am going to show you how we get that creamy Au Gratin sauce or whatever you want to call it to make those the creamiest delicious potatoes you've ever tasted.
