"Hi! This is Richard Buccola here in New York City and today on behalf of Expert Village, I am going to show you how to make Scalloped Potatoes. Have your nice slices of potatoes and what you want to do is boil them in the water for about 2 to 3 minutes and then put them right back into cold water so they will stop cooking. You want them to be cooked but you want them to still be firm. So be careful placing them into your boiling water. We have our water boiling here and I am just going to put them right in there. Like I said 2 to 3 minutes and get them back up to a boil and they should be done. Strain them with your colander and right back into cold water. It is very important to put them back in cold water because if not, they are going to keep on cooking and they are going to get too mushy. You want them to be firm and you want them to keep their shape. Alright with that said, we are going to come back and start chopping the onion, chopping the garlic, frying some butter up and get it all going. Scalloped Potatoes, it's delicious and it is here on Expert Village. "
