"Hi I'm Lori Schneider from Austin, Texas and owner of Figs Catering on behalf of Expert Village we are going to show you how to make vegetable spring rolls with a Thai peanut sauce. So my next vegetable that I'm going to get ready is the carrot and what we are going to do is Julienne our carrots as well. So I'm going to start by removing the top of the carrot and again I'm going to do about 2-3 inch cut down the length for the carrot. First thing I'm going to do is go ahead and peel it just cause the peeling is eatable on the carrot but it is not very attractive on the eaters side and sometimes it can be a little bitter. So we are going to go ahead and peel the rest of our carrot here. We are going to treat it just like we did the cucumber although I'm going to make my first cut on the length of the carrot but now I'm going to turn to the side and that way it won't roll around on me. Carrots are hard, I have a sharp knife I'm going to make sure that I don't cut myself. So now I'm going to do my slices down the length of the carrot. I'm going to turn the carrot over to the side and we are going to make some Julienne cuts from here. They are kind of moving on me here so I want to be careful and that is what they look like. Now if you don't have the time to do Julienne carrots then you can always buy the snack sticks in the grocery store. I like the Julienne carrots cause I like the texture and cause I like the crunch of them. I'm going to go ahead and do the rest of these so we have them ready to go.
