"Hi I'm Lori Schneider from Austin, Texas and owner of Figs Catering on behalf of Expert Village we are going to show you how to make vegetable spring rolls with a Thai peanut sauce. So now that I got my bean sprouts draining I'm going to go ahead and start with my English cucumber. What we are going to do is go ahead and do some Julienne cuts of our English cucumber and out Julienne cuts are going to be about 2-3 inches in length. I'm going to take off the very base of the cucumber so it will be this long and what I'm going to do is just go down the length of the cucumber and make some slices. Don't get confused I'm calling these English cucumbers but in the store they are often labeled hot house cucumbers and that is the same things. They are a little bit different then conventional cucumbers that you normally see they are not as waxy. Now I'm just lining them up and cutting the other direction, they are not as waxy and also the skin is not nearly as bitter. So you can eat the skin as well as the seeds. So this is what they look like once they are all nice and cut. I'm going to do the other side here. Also you would notice that English cucumbers are typically wrapped(oops a little slippery I'm going to move that so I won't cut my self) are typically wrapped in plastic so you would notice that as well. Now we got our Julienne a English cucumber, again you can see the sides and see the thickness of them. "
