"Hi, this is Rich Buccola of New York City, and today, on behalf of Expert Village, I'm going to show you how to make stuffed jalapenos. All right, we're going to start putting some water on our sauce pot for our -- we're going to boil our jalapenos 'til they're crisp and soft at the same time. And we're going to actually drain our water from our ancho-pepper and start to chop that up real, real fine. All right, just going to rinse that out, and start to chop that up fine. All right, I just want to talk a little bit about the ancho-pepper. In its dried form, the seeds are very, very hot. That's why we took them out. We boiled them in water because it actually brings it back to life, and it gives it that nice softness. This ancho-pepper is actually -- it's got a sweetness to it, but it's also semi-hot at the same time, which is why we're going to use it today. And because it was such a big pepper, I sliced it in half and we're only going to use half. We're going to chop it up real fine. All right, so we're going to chop this up real fine. I'm just going to start by making some nice cuts this way lengthwise, and then we're going to turn it and do it the other way. And after that, we'll just actually really chop it fine. The other half that I didn't use will actually dry again and I can save it and use it for something else. I'm just going to turn my board this way and just start making cuts like so. And again, this pepper is -- it's got some heat. What really has some heat is the seeds, and you could use them for some stuff. You could actually grind this whole pepper up into your blender and use it for different things. But for today, we're going to, like I did, put it in the water, bring it back to life, and just give it a good chop and so it's real fine. Turn it that way, and give it another chopping. And that's about it. You got it nice and chopped. Come back. We're putting it all together."
