"Hi, I'm Rachel for Expert Village. Now I'm going to show you how to clean up the zucchini. We take the top part and we are going to just cut it you don't need it. Then with a knife we are going to go around it with those parts you can use for later on to mix it with something else or mix it with the sauce that we are going to do for the stuffed pepper. Go around as you can see I'm just going round and round and taking with you, I'm not comfortable with a knife you can always take the spoon and just go around it. If you have a big zucchini you can always cut it in half and just clean up those halves as long as it has a bottom with no holes that can hold the zucchini it is fine to be used. So I'm cleaning it up. When you pick up the zucchini, it is important to pick up the chubbier ones. It should not be too thin cause if it is to thin, it is going to break during cooking and it should not have big holes on the bottom cause of course all the stuffing is going to go out. "
