"Hi, I'm Leah Schaefer and on behalf of Expert Village, I'm going to show you how to make my party dips. So now we're going to go ahead and slice up the garlic that we used to rub down the bread with and we'll put it in the pan. I'm just going to do small pieces. I'm just going to mince it up here that way it'll get distributed evenly. Remember we're going to add this in directly into the pan with the sausage. So we don't have to worry too much about it burning. Just a couple more turns through and brush off the side of the knife to get all of the other pieces; we'll put it into another pile. Okay and that sausage is starting to sizzle again. We will go ahead and just take the garlic up there in the knife there, it's going to give a nice surface to transport it from the board to the sausage. We drop it in there, make sure you get it off and stir it around. So we have the garlic in there now we're going to go ahead and add the fennel seeds. I'm going to make room in the middle for the fennel so that it will toast it nice and crispy. Whenever I'm working with fennel seeds, I like to just take them in my hands before I add them to the pan and crush them a little bit just to release some of the flavors. Just give them a crush and drop them right in the middle there and we'll just let them sit just a second until they start to get toasty. They may even pop a little bit from some of the oil. Whenever you're cooking with fennel seeds it releases a really strong aroma, almost like that of licorice. It's a really earthy glitzy flavor. Alright, now you can see the seeds are starting to get just a little bit brown. So we'll go ahead and start stirring them in with the rest of the sausage and the garlic. And as we're doing this one last cooking of the garlic or the garlic and the sausage, we'll go ahead and continue to break it up. And we'll go ahead and turn down the heat a little bit and we'll get ready to start adding some of the cheeses."
