"Hi, this is Rich Buccola here in NYC and on behalf of Expert Village today I'm going to show you how to make shrimp cocktail. We're going to devein and descale or deshell the shrimp. What you want to do is get your good pairing knife, go right in the center here. See the center the two legs here, very simply open it up and take it slow just make a nice little incision straight down. That should take off all your shell very easily you see your shell will come right off. We have the fan on today so everything of course will blow off on me but I leave this last bit of the shell on around the tail. That just helps when you put it on your shrimp cocktail it just gives somebody I use to say, my mom use to say it gives them a little holder to hold it. These are beautiful shrimps, we're going to love these today. Now you see the vein in here I like to clean that vein out. Just some people don't like it, I don't like it I'm one of them. Just give it a little incision just cutting real easy and it comes right out, and that is it you just take that out in one shot and your shell and all of this. My mom just use to put it on a paper towel like this she'll put her shrimp in there, in her bowl and that is how you do it. When we come back we're going to have all these deveined, deshelled and ready to go, shrimp cocktail on Expert Village."
