Now we're going to saut? our sausage. I have two links of pork sausage. I'm just going to slit them out of their cases. That's the fastest way to cook these, and we want it crumbled up for this stuffing. The onions have been sweating, I'm going to add some more butter, keep that going. And then pull the sausage out of the casing like that, break it up a little bit with my hands so that, once it's in the pan I can't touch it, really. I want to break it up a little bit in advance. There we go, do another one. You just need two links for the number of mushrooms we have. Remember, the mushrooms are in the oven par-baking. Okay now it's important to give that a stir to break up the sausage further, and get that brown and cook through. It's raw pork, so it has to cook all the way through before we add the rest of our ingredients. And in the next clip we will do just that.
