"Now we've poached our chicken and let it cool a little bit so that we can handle it. Here it is. What we want to do is remove the skin and take it off the bone, and just dice it up a little bit. I just threw this into the freezer, that's the quickest way to chill something, right? So, that was just a couple minutes ago and now I can handle it. I'm going to take a sharp knife, and just cut along the bone. As you see, this chicken is perfectly cooked. It's a little, a little, just tiny bit, the slightest bit pink, but that's fine, this bird is cooked. Okay, take a little bit more skin off. This is the chicken tender here. Now we're going to just dice it up a little and trim that piece off. It's nice and juicy still. You can see and hear the juiciness of it, it's not at all dried out. Poaching is a good way to keep the chicken juicy, because it just gently cooks it. Okay, that got it. Now what we're going to do next is we're going to toss this with our prepared barbeque sauce. I'm going to get this out of the way. Just whatever barbeque sauce you happen to like. I'm going to add a little bit of pickle relish. I like the tang of pickle relish in this; it's a little bit of a surprise. Add our chicken. Toss this around, and it's easy as that. The chicken is ready. When we come back, we're going to slice a red onion in preparation for building our quesadillas."
