"Here we're going to poach our chicken breast. I'm heating the pan. It's just a medium sized skillet, because we're only going to do one chicken breast. What you want to do is put the breast...You can poach salmon, you can poach eggs, certainly, but fish and chicken are the main kind of ingredients you're going to poach. You put it in there. We're going to add our aromatic vegetables. You don't want to crowd the pan too much, it will just take longer, but you do want to flavor the chicken. And then, add fresh water. You don't want to cover the chicken, you just want to put enough water so that the top peeks out. Then you want to season it with a little salt and pepper. Now this is going to come barely to a boil, and we're going to turn it down to a simmer and cover it, and within 15 minutes, that chicken breast - even though it's bone-in and skin-on - will be done and ready to shred. When we come back, we are going to shred our chicken and toss it in the barbeque sauce."
