"Now we're going to prepare our aromatic vegetables. We need these vegetables to flavor the chicken when we poach it. Poaching chicken is the fastest way to cook a piece of chicken, so that's how we're going to do it. I have celery here that's been washed, and I include the celery leaves, the celery leaves have lots of flavor. We're just going to give it a rough chop. This is not going to be served; it's just to give the chicken some flavor. Okay, my carrots, I'm going to lop off the tops and the little bottoms. I'm going to use my vegetable peeler to quickly take the skin off. Now, you don't need to take the skin off, but the carrot will release more of its flavor if you do, and it's very quickly done with a vegetable peeler, so I choose to take the skin off. Do it one more time. We're going to move the skin here, and just give these carrots a rough chop also. This is a half of a sweet onion that I had from another use, so I don't need to prep a whole new one in. Just give that a little chop. And our vegetables are ready for our poaching technique. When we come back we're going to poach our chicken breast."
