"Hi I am Lori Schneider with Figs Catering in Austin, Texas. Today on behalf of Expert Village I am going to show you how to make an orzo pasta with roasted mushrooms and gorgonzola cheese. Now that the mushrooms are in the oven roasting we are going to go ahead and mix up our balsamic vinegar and have that ready to go and balsamic vinegar has really a nice full taste and it is really going to round this whole recipe and bring it all together. It is going to reduce and then thicken and become extremely sweet so it has got a really, really complex and wonderful flavor profile. I like using balsamic figure reduced drizzled on figs, on cheese, on breed, on all sorts of things. It is a great, great thing and it will keep forever so you can just keep it and pull it out whenever you need it. We are going to double the amount of balsamic vinegar that we think we are going to need. I have about a cup and a half of balsamic vinegar. What we are going to do is bring it to a boil and reduce or boil out all the extra liquid so that it becomes a nice strong syrup."
