"Hi! I'm Lori Schneider with Figs Catering in Austin, Texas. On behalf of Expert Village, today I am gonig to show you how to make an Orzo Pasta with roasted mushrooms and Gorgonzola cheese. Okay Orzo pasta is actually a pasta and it looks like rice. A lot of times it is confused with rice but it is pasta and it is really really good. I love using it in all kinds of salads and side dishes just because its got the unique shape and it pairs really well. It sits well on the fork and you don't have to worry about cutting it or anything like you would spaghetti. Okay so our first step for making our Orzo is to start off with a stockpile full of boiling water. And we are not making that much Orzo today so I filled my pot about 2/3 of the way full and it is coming to a rolling boil so now I want to make sure that I season it. I'm going to add a good 2 tablespoons of Kosher salt. You really want that salt to flavor your pasta because it is the only opportunity that you are really going to get for that pasta to absorb that salt flavor, so you want it to taste kind of like salt water. Once that has all been absorbed into the water, it looks like it has, I am going to go ahead and add the Orzo pasta. Here I've added about a cup and half of Orzo pasta. When you cook pasta, it is going to double in size so keep that in mind for your portions. "
