Okay, so the next step in our process, we're going to shave down our onions. We're going to really really go light on these because we want not only for these to be enjoyable, we don't want people crying and definitely most importantly we don't want to have you sending away with a huge onion breath. So we're going to slightly shave these. Now I'm just going on a bias cut, or if you want to say a Y cut in laiman terms. One of the most famous movies that I remember is Good Fellas. Because as a chef I remember when Ray Leoda made that classic statement when they all got locked up. He said, "Hey Paulie, he had that certain technique about minting garlic. He use to shave it so close it would literally liquefy in the pan." So that's what we're doing today. We're going to liquefy these onions first and caramelize them down. And then from there, it is on. So we've got our onions, we want to make these look super cool. So we're going to keep our rough cut right there, keep our shaved cut right there, totally seperate from each other. So we want the flavor with this one. This one is for the presentation. So, we're on to our next step.
