"So the next part in our step, we have some dates right here, and of course you all know, you know, there's such history behind dates. You know, dates, figs, you know, everyone lived off of them. Now the reason why I went with dates for this salad is that you have the balsamic which has a little bit of a sharp edge. You have the sweetness from the bosc pears, the sweetness from the dates, the Gorgonzola cheese, the chopped garlic, the candied walnuts. And I know it seems like a sweet salad. It's not a sweet salad, but you know what, it's a sweet salad because I love it. So this is our next step. We're taking dates, we're just going to kind of chop these down. These are really not supposed to linger in the salad. They're just actually supposed to be something to distract your taste buds. So we're just going to take these. We've already depitted them, and we're going to chop these down a little bit just to kind of cut them up a little, make them kind of small. And we're going to kind of chop these down. So, I love dates. You know, I'd recommend everyone in their lifetime at some point and time, you have to work as a server. Because this is the only way that you'll know flavor and profiles, and I know everyone has their own score of, this was good, that was good, or this is good. But you know what, the best reputation is through word of mouth. So, word of mouth right here. The dates baby, that's how it's going down. So we chopped our dates. We're going to get them back in our rim again. We're going to move on to our next step which is going to be some shaved badelia onions. "
