"So our first step that we're going to go about this with is our mixed greens. And if you remember in this one, this is known as the European mix. So we have ridecio, arugula, endive, belgin, and as well as some frizea. So that's our five blend mix right there. We're just going to take, just a nice bunch. We're serving it for our guest this evening. One of the main things with salads is that I find that salads tend to get drenched or drowned a lot in dressing. So we're going with a light spray. Just to ensure you know, you can always add on, but less is more. So we want to go with less on the dressing, more with the plate presentation. So, we're going to scoop this all in there. And one of my biggest pet peeves with salads is that they're never washed, they're never washed correctly. So we're going to wash our greens out. As you can see we have it in a nice sturdy colander, and move on to our next step. "
